Smoked Ham and Potato Soup

Potato soup recipe features smoked ham, diced potato, shredded cheddar cheese, butter, flour, milk, sliced green onion, sour cream, coarse salt, and fresh ground black pepper.

Ingredients -

1 cup Smoked Ham, diced in 1/2-inch cubes
3 large Baking Potatoes, baked, cooled, peeled and diced into ½-inch cubes
2/3 cup Cheddar Cheese, shredded
1/3 cup Butter
1/3 cup Flour
3-1/2 cups Milk
2 Green Onions, sliced
1/2 cup Sour Cream
1 teaspoon Coarse Salt
1 teaspoon Fresh Ground Black Pepper

 
Preparation:

1. In large saucepan, melt butter.

2. Stir in flour, heat and stir until smooth.

3. Gradually add milk, stirring constantly until thickened.

4. Add potatoes and onions.

5. Bring to boil, then reduce heat and simmer for 10 minutes.

6. Add remaining ingredients; stir until cheese is melted.

7. Serve immediately.

8. Note: Smoked Bacon may be substituted for ham (6 slices, diced, fried and drained).

 



Soup Making Tips -
Creamier Soups
To make your soup creamier, you can add cream, pureed stale bread, plain yogurt or ground nuts. For the nuts, you will need to crumble them until they are about to become a paste. Alternatively, you can add a thickener like corn starch, pureed potatoes, cream cheese, cream of rice or sour cream.
