Slow Cooker Potato Soup

Slow cooked potato soup features, potato pieces, chopped white or yellow onion, chopped carrot, chopped celery, chopped fresh parsley, water, chicken bouillon cubes, coarse salt and fresh ground black pepper.

Ingredients -

3 Baking Potatoes, peeled and cut into bite size pieces
1 Large White or Yellow Onion, chopped
1 Carrot, chopped
1 Celery Stalk, chopped
1 tablespoon chopped Fresh Parsley
5 cups Water
4 Chicken Bouillon Cubes
1 tablespoon Coarse Salt
Fresh Ground Black Pepper, to taste
1-1/2 cups Whole Milk

 
Preparation:

1. Add the potatoes, onion, carrot, celery, fresh parsley, water, chicken bouillon cubes, coarse salt and fresh ground black pepper to slow cooker.

2. Cook on low 10 to 12 hours or on high 3 to 4 hours.

3. During the last hour of cooking, add 1-1/2 cups milk.

4. Puree soup in blender for creamy soup.

 



Soup Making Tips -
Using a Slow Cooker
If you are cooking your soup in a crock pot, make sure that any frozen meat is defrosted and cut into small pieces. This will prevent food poisoning by ensuring that the temperature reaches 140 degrees quickly.
