Homemade Potato Soup

Potato soup recipe starts with simmering chopped potatoes, celery slices, sliced carrot, chopped onion, parsley flakes, chicken bouillon, and salt in water. Soup is simmered until vegetables are tender. Whole milk, all-purpose flour and diced American cheese are stirred and heated until cheese melts.

Ingredients -

3 cups peeled, chopped Baking Potatoes
1 cup Water
1/2 cup Celery Slices
1/2 cup sliced Carrots
1/4 cup chopped White or Yellow Onion
1 teaspoon Dried Parsley Flakes
1 Chicken Bouillon Cube
1/2 teaspoon Coarse Salt
1-1/2 cup Whole Milk
1 tablespoon All-Purpose Flour
1/2 pound diced American Cheese

 
Preparation:

1. In a large saucepan combine potatoes, water, celery, carrots, onion, parsley flakes, bouillon cube and seasoning.

2. Mix well, cover; simmer 15 to 20 minutes or until vegetables are tender.

3. Add milk to flour, mixing until well blended.

4. Add milk mixture to vegetables; cook until thickened.

5. Add cheese and stir until melted.

Serving Bowls
Use serving bowls that are deep to keep your soup warm. To help the soup cool down more quickly, use wider bowls. You may also make an edible soup bowl by hollowing out a small squash or baking a bread bowl.
