Home Style Potato Soup

Potato soup prepared from pureed cooked potatoes combined chopped green onion, coarse salt, whole milk, butter, chopped celery, chopped garlic, and chopped fresh parsley.

Ingredients -

2 cups diced Baking Potato
1 cup finely chopped White or Yellow Onion
1/2 cup chopped Green Onions
2 teaspoons Coarse Salt
1 cup Whole Milk
1 stick Butter
3 cups Water
1/2 cup chopped Celery
1 clove chopped Garlic
1/4 teaspoon Fresh Ground Black Pepper
1/4 cup chopped Fresh Parsley

 
Preparation:

1. Add potatoes and water to large saucepan or stockpot.

2. Stir, cover and cook until potatoes are tender.

3. Puree potatoes and cooking liquid in blender until smooth.

4. Return potatoes to soup pot.

5. Stir in green onion, salt, whole milk, butter, chopped celery, chopped garlic, and parsley.

6. Reheat over medium about 5 minutes.

 



Soup Making Tips -
Freezing Soup
Making large batches of soup and freezing portions of the soup will make future meals a lot easier later. Use heavy-duty plastic containers for storing soup and leave ½˝ of headspace, since frozen foods will expand. If the container is airtight, your soup will keep for a few months in the freezer.
