Ham and Potato Soup

Simple and delicious potato soup prepared from boiled potatoes and onion combined with butter, all-purpose flour, diced ham, whole milk, reserved cooking liquid and dried parsley.

Ingredients -

6 medium Baking Potatoes, peeled
1 medium White or Yellow Onion
1/2 cup Butter
1/2 cup All-Purpose Flour
1 cup diced Ham
2 cups Whole Milk
1 teaspoon Dried Parsley Flakes

 
Preparation:

1. Dice potatoes and onions; boil in water until tender.

2. Drain off water and reserve cooking liquid.

3. Add butter to potatoes and onions until butter melts.

4. Add flour, ham and parsley; stir lightly.

5. Pour in 4 cups of potato water and then milk.

6. Turn heat up to medium and stir until soup thickens, about 5 minutes.

7. Add salt to taste.

A vertical swivel-blade peeler is ideal if you wish to avoid wasting any food, because the blade closely stays with the shape of the food you are peeling.
