Easy Potato Soup

 

Ingredients -

6 cups diced Potatoes
1/2 cup chopped White or Yellow Onion
2 Celery Stalks with Leaves, chopped
1 Carrot, chopped
2 teaspoons Coarse Salt
1 teaspoon Celery Salt
1/4 teaspoon Fresh Ground Black Pepper
8 Bacon Slices

White Sauce:
6 tablespoons Bacon Drippings (or melted butter)
2 tablespoons All-Purpose Flour
2 cups Whole Milk

 
Preparation:

1. Fry bacon until crisp. Remove bacon and drain grease/drippings into bowl, reserve.

2. Break bacon into pieces.

3. Wash and prepare vegetables.

4. Place vegetables in large Dutch oven and enough water to cover.

5. Cook over medium heat, covered, until vegetables are tender. Do not drain.

6. Prepare white sauce with reserved drippings mixing well.

7. Slowly add white sauce to vegetables, stirring to mix. Heat through and add bacon pieces.

 



Soup Making Tips -
Reheating Frozen Soups
If you freeze soup, you will eventually need to reheat it. To reheat your soup, thaw it in the refrigerator first. Then, heat it up in the microwave or in a sauce pan on the stove. You will need to add ¼ to ½ cup of water to prevent burning.
