Cream of Potato Soup

Potatoes are peeled, cubed and simmered in water with carrots until vegetables are tender. In Dutch oven onions are sautéed in butter until tender and combined with whole milk, light cream, coarse salt, dried rosemary, dried sage, dried marjoram, and garlic salt. Potatoes, carrots and cooking liquid are added to milk mixture and simmered about 30 minutes. Soup is pureed, served warm, and garnished with fresh chopped parsley and a pat of butter.

Ingredients -

4 Large Potatoes, any variety
2-3 Carrots, scrubbed & chopped
2 cups Vegetable or Chicken Stock
4 tablespoons Unsalted Butter
1 medium White or Yellow Onion, chopped fine
8 cups Whole Milk
2 cups Light Cream
1 tablespoons Coarse Salt
1 pinch Dried Rosemary
1 pinch Dried Sage
1 pinch Dried Marjoram
1 teaspoon Garlic Salt
Fresh Parsley, chopped
Butter

 
Preparation:

1. Scrub potatoes well and knick out eyes and dark spots.

2. Do not peel.

3. Dice into cubes and place with carrots and 1 cup soup stock in heavy 3 quart saucepan.

4. Cover and cook at medium heat for about 5-7 minutes.

5. Reduce heat to low and cook covered until potatoes are tender but not mushy, about 20-30 minutes.

6. Melt butter in Dutch oven until it sizzles.

7. Saute onions in butter until tender.

8. Add milk, cream and seasonings.

9. Cook mixture over medium heat until very hot. Do not boil.

10. Add potato mixture to hot milk.

11. Cover and simmer on low heat for 30 minutes to an hour.

12. Remove from heat and puree in small batches. Return to clean pot. Heat over medium 5 minutes.

13. Before serving, garnish individual portions with chopped parsley and a pat of butter.

 



Soup Making Tips -
Pureeing Soups
To puree soup when it is already hot, you can use either a countertop blender or a hand blender. Puree the soup once the meat or vegetables are just soft enough to do so. Be thorough and puree each batch to the same smooth consistency. Afterwards, you will need to reheat the soup. Reheat it on low to medium but do not bring it to a boil.
