Chunky Potato Soup

Home style potato soup starts with boiled red potato pieces combined with sautéed onion, all-purpose flour, crushed red pepper flakes, and fresh ground black pepper. Reserved potato cooking liquid, milk, sugar, shredded cheddar cheese and cubed cooked ham are stirred into potatoes and soup is simmered over low heat about 30 minutes.

Ingredients -

3 medium Red Potatoes
2 cups Water
1 small White Onion
3 tablespoons Butter
3 tablespoons All-Purpose Flour
Crushed Red Pepper Flakes
Fresh Ground Black Pepper
3 cups Whole Milk
1/2 teaspoon Sugar
1 cup Shredded Cheddar Cheese
1 cup cubed Cooked Ham

 
Preparation:

1. Peel potatoes and cut into 1-inch cubes.

2. Bring water to a boil in large saucepan.

3. Add potatoes and cook until tender.

4. Drain, reserving liquid. Set aside potatoes.

5. Measure 1 cup cooking liquid, adding water, if necessary; set aside.

6. Peel and finely chop onion. Melt butter in saucepan over medium heat.

7. Add onion to saucepan; cook, stirring frequently, until onion is translucent and tender, but not brown.

8. Add flour to saucepan; season with pepper flakes and black pepper to taste.

9. Cook 3 to 4 minutes.

10. Gradually add potatoes, reserved 1 cup cooking liquid, milk and sugar to onion mixture in saucepan; stir well.

11. Add cheese and ham.

12. Simmer over low heat 30 minutes, stirring frequently.

13. Store leftovers, covered, in refrigerator.

Potato Selection

Choose potatoes that are firm to the touch and similar in size of you are preparing whole so they finish cooking in a similar time frame. Avoid potatoes with sprouting eyes, soft spots or bruises, and potatoes with any green coloration.

Sauteing Vegetables
Before adding harder vegetables to your soup, it is often best practice to sauté them first. This will enrich the flavors. If you are sautéing denser vegetables like broccoli or potatoes, you will need to blanche or steam them before you sauté them.
