Cheesy Potato Soup

Potato soup prepared from potato pieces simmered in vegetable stock combined with sautéed bacon, chopped onion, minced garlic, and chopped green pepper. Soup is seasoned with celery seed, sea salt, fresh ground black pepper. Velveeta cheese and milk complete the soup. Serve hot.

Ingredients -

8-10 medium Red Potatoes
Vegetable Stock, to cover potatoes
1 Green Pepper, chopped
1 large White or Yellow Onion, chopped
2 Garlic Cloves, minced
1/2 pound Bacon, cut into 1" pieces
1 cup Whole Milk
1/3 package Velveeta, cut into 1" cubes
1 teaspoon Celery Seed
Sea Salt
Fresh Ground Black Pepper, to taste

 
Preparation:

1. Quarter and cut potatoes into small pieces.

2. You can peel them or scrub and leave skin on.

3. You may leave the skin on for red or new potatoes, and peel if using others.

4. Place potatoes in large pot and cover with vegetable stock; add salt.

5. Boil, covered until tender.

6. While potatoes are boiling, place bacon, onion, garlic, and green pepper in another large pot and sauté until bacon is cooked, green peppers are tender, and onions are clear.

7. Drain bacon fat, except for about 1 tablespoon.

8. Add celery seed, salt, and ground pepper and sauté for 1 more minute.

9. Add sautéed ingredients to undrained boiled potatoes. Turn heat to medium.

10. Add Velveeta and stir soup until cheese melts. Add milk, and stirring constantly, heat until soup is hot.

11. Be careful not to burn it.
